The production of wines covered by the Appellation of Origin Tarragona will be made exclusively with the following varieties of Vitis Vinifera:

Ull De Llebre or TempranilloThe variety ull de llebre or tempranillo is a very productive variety that produces very balanced wines, ruby colour, not very intense and of moderate grading, slightly acidic, with strawberry and wild fruits aroma. It could be said that it is the best traditional variety if valued for its production and quality. The coupage between tempranillo and cabernet sauvignon is of the most appreciated as they both complement each other.

Temapranillo needs careful growing, the same as the garnatxa, better if on sunny slopes, with discreet soil that needs little fertiliser and little tilling. In fact this is common to nearly all the varieties. It has the advantage that it buds late, that makes it less sensitive to spring frost, whereas it is very sensitive to drought and wind. A soil that is too dry is not suitable for tempranillo.

If the area is very windy, the vine shoots can easily break. It is a variety sensitive to oidium. In soils that contain too much active lime, the weakest rootstocks are the most appropriate, like the 41 B and 110-R.

This variety benefits from regions with climates type I-III-IV but it can also adapt to climates I and V, to marine and high mountain climates.
