The production of wines covered by the Appellation of Origin Tarragona will be made exclusively with the following varieties of Vitis Vinifera:

SyrahThe syrah gives a great quality wine, different from the cabernet and merlot, fresh and with a good alcoholic grading. Suitable to be drunk as a young wine, for aging and for the production of great rosé wines. If in search of a wine different than merlot and cabernet, syrah can be planted. It is ideal for costal areas, where it finds the best conditions for its production. The best climate regions are: III-IV-V.

Its production is similar to a cabernet. The period from the verasion to the harvest is very fast so it has to be collected within a few days. It has a harvest optimum moment and if this passes the grape is easy prey for grey mould. The wines shoots are fragile and break easily in a strong wind, therefore it is essential it is trellised and cultivated it in areas which are not too windy.

Syrah is also very sensitive to chlorosis. This can be the most limiting factor in soils that have a high active limestone. It has to be planted on rootstock H1-B in good soils and on 140-Ruggeri if the soil is poor. It matures like Merlot.

The clones of most interest are the 174, that is very fertile, and also the 470, which is more productive, although it is of less quality. The majority of clones benefit from a short pruning. If the production is difficult then a long pruning or Guyot can be carried out.
