The production of wines covered by the Appellation of Origin Tarragona will be made exclusively with the following varieties of Vitis Vinifera:

The cabernet sauvignon is a variety considered originally from France, today spread throughout the world due to its ability to adapt. It is the black variety considered to give the best quality of wine and there is no new red wine production that doesn?t count with its presence. The wines it produces are dry, with body, alcoholics, acidic and purplish colour. On the nose it is deep and intense, floral (violet), fruity (berries), and vegetable (pepper). In the mouth it is full flavoured. When young it is astringent, losing this quality when aged, obtaining a great refinement. The cabernet has by itself the capacity to give a high grading and an acceptable production that makes it suitable to be cultivated in any type of soil, even in the fertile ones if thought wise with the practice of cultivation and fertilizing. . On an agronomic level the cabernet does not present any difficulty. It produces well and is not very affected by grey mould or by other diseases that are normal in other varieties. With the cabernet, the vine grower can improve his traditional wines as well as being profitable. . The cabernet is very sensitive to shortages of potassium and magnesium, a matter that has to be born in mind. It is better to plant it over 110-R and if the soil is very fertile it can also be planted over 41-B and SO4. It benefits most from the long pruning, but if the short pruning has been imposed because it is simpler, it will give better quality wine. |
